Second attempt at cupcakes f.t Vanilla cupcakes with wine sauce and chocolate sauce.

Envy is sort of a guilty pleasure we experience and cant help not thinking about. Its absolutely human feeling, but what matters is how you deal with it. You need to take a moment with it, analyse it, face it and move ahead.

Why does envy happen, in my case what I am currently experiencing is even tho I am putting so much effort, there is nothing turning out. Am I eager for something grand, yes a part of me does want that! As much as I want to deny having the popularity which comes with the fame, a part of me does want it. But I also know that is not what would make me happy, the thought of it does, but that is not the ultimate thing. And then there is a long self doubt session of not being good enough or may be this is not my thing or just a need for some quick validation, its a pretty tricky stage to deal with. But just like all phases this too shall pass, we just have to keep doing the things that make us extremely happy and the ones that we won’t mind spending a hell loads of time and energy. The hussle will make sense someday! yes it will.

Just wanted to blabber that out.

Today we making Vanilla cupcakes with wine reduction sauce & chocolate sauce.

Lets start with the cupcakes!

  1. For the dry ingredients mixture, Sieve in the flour in a bowl to get rid of the lumps and any other impurities.
  2. Add 1/2 teaspoon baking powder + 1/8 teaspoon salt  and mix well (This is your dry mixture)
  3. Take another bowl with the softened unsalted butter and 1/4 cup granulated sugar and whisk until it becomes creamy at this stage add one large egg and mix well. (This is your wet mixture) 
  4. Add the dry mixture to the wet mixture part by part frequently mixing in a clockwise direction slowly and avoiding vigorous whisking. 
  5. Add 1/4 cup milk and 2 tsp of pure vanilla extract to this mixture and mix the whole batter properly. 
  6. Place the cupcake tray with the paper cupcake liners and use an ice cream scoop to put the batter in the cupcake tray.
  7. Do not overfill the cupcake holders and leave some breathing space dor the cupcakes to rise.
  8. Preheat the oven at 180 degree celsius for 10 min and later bake the cupcakes for 15-20 min at 180degree celsius.
  9. Continuously check if the cupcakes are done by placing a tooth pic inside the cupcake, if the batter attaches to the toothpick, it still needs to cook if not it is done. 

For the wine sauce,

Take a saucepan and add some cranberry Tropicana juice or even jam will do (use very little tho)  to it and some wine, wait until it simmers and add some honey for sweetness, lemon zest and very little lemon juice. Wait till this mixture reduces and becomes a sticky sauce. You need to check it if its as per your taste and accordingly adjust. Our aim is to make a sweet and tangy sauce.
