Cooking the “Vietnamese Pho”

Have you been there too? When you are actually struggling to fit in, and when you finally get your share of acceptance and validation and of course a lot of popularity, the feeling is crazy!

What then, after you achieve your goal ? Yes, even I had the same logic of “I will be happy (maybe) if I reach this particular goal or get popular etc. But it doesn’t stop there, as humans we actually crave for even more happiness and hype. Its hella crazy (actually). I dont want to loose it all and myself in the name of fame and popularity. I dont want to loose the actual joy of experiencing little things that make me happy. When you come from literally nothing and a lot of struggle to get where you actually want to be, the consequence are difficult to compromise and play with.

Vietnam has my heart and its a thing! So I made the very famous “Vietnamese Pho” as a part of the #365dayschallenge

What is the “Pho” all about ?

Vietnamese Pho is a noodle soup consisting of broth, rice noodles, herbs, sometimes any sort of protein. It is a very popular street food in Vietnam and is also served in restaurants across the globe.

Here is my version of the Vietnamese Pho.

  1. Begin with chopping the basic requirements : Finely chopped Garlic, Ginger, onion.
  2. Dice some fresh vegetables: Carrots,potato, etc(mushrooms are also a good idea here, whatever you want to include in the soup) Quarantine gave me only a few options!
  3. Next, lets make the stalk, in a pan drizzle some oil, when medium hot add in the chopped onion, ginger, garlic and toss until golden brown. (Do not burnt it yall).
  4. Sprinkle in some salt as per your taste, about 1/2 tbp of pepper + 1 Star anise.
  5. Saute this mixture for about 4- 5 min until the veggies release out all the water and they are nice and soft.
  6. At this stage you can add in the mushrooms (if you are using them here) .Saute them a bit.
  7. Add about 2-3 cups of water or as per your requirement. (Do not over dilute the stalk, just enough to give it a souppy touch and flavor)
  8. You need to now have patience for about 35-45 min. Yes! its a stalk, it gets its flavor as time passes.
  9. For the final plating of the “Pho”, take a soup bowl, place about one cup of the stalk with some boiled rice noodles, garnish it with some finely chopped red chilies, bell peppers and freshly chopped coriander.
  10. You can also use any form of cooked protein here, I used an egg.
  11. There you go, this soup works like magic! Wholesome, healthy and very nourishing.

#TIP to cook the rice noodles: Do not cook them in boiling water. Just soak them in hot water for about 3-5 min.
